Classics are classics for a reason – that's why we had to include Yogurt Mint Dip as part of our easy pantry recipes for your Thermomix. As you probably have seen, we have a whole spectrum of curry recipes, many of them being hot and spicy, needing something cooling and refreshing on the side. What could be more suitable than mint, cucumber and greek yogurt? Toss all of your ingredients in to blend and serve as a side, a standalone dip or even a salad dressing.

INGREDIENTS


  • Lemon icon
    Lemon
    1 (2.05oz/58g)
    juiced
  • Cucumber icon
    Cucumber
    about ½ unit (5.29oz/150g)
    deseeded, diced
  • Garlic clove icon
    Garlic clove
    3
  • Fresh chili icon
    Fresh chili
    about ½ unit (0.35oz/10g)
  • Mint icon
    Mint
    ½ cup (about 0.53oz/15g)
  • Sea salt icon
    Sea salt
    1 pinch
  • Greek yogurt icon
    Greek yogurt
    7.05oz/200g (about ¾ cup)

METHOD


  1. Add garlic clove, fresh chili, mint and sea salt to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Chop - approx 6 sec, speed 5
  4. Then add lemon and greek yogurt to the TM5 bowl
  5. Blend - approx 3 sec, speed 4
  6. Transfer content of TM5 bowl to medium bowl
  7. Stir cucumber into the medium bowl
  8. Stir greek yogurt into the medium bowl
  9. Cover with plastic wrap
  10. Chill in fridge
  11. Serve
