Baked goods can be a powerful nostalgia trigger – it's well documented that smells can provoke memories – and the familiar smell of our freshly baked White Chocolate and Cranberry Hot Cross Buns may take you back to your childhood. If not, they may make fond memories for anyone who gets to eat them! These fluffy treats are halfway between bread and cake, and can be configured as per your tastes. The dough takes a little bit of maintenance but this recipe is a manageable one for beginners, or those looking to branch out into a new baking direction.

METHOD


  1. Line a clean baking sheet with parchment paper then set aside
  2. Add golden caster sugar, buttermilk and bread flour to the TM5 bowl
  3. Fit TM5 bowl to TM5
  4. Cook - approx 3 min, 80°C, speed 3
  5. Then add sea salt, butter, orange, lemon, ground cinnamon, mixed spice, lemon, orange and ground cinnamon to the TM5 bowl
  6. Mix - approx 10 sec, speed 6
  7. Then add dried yeast to the TM5 bowl
  8. Knead - approx 3 min, dough
  9. Then add raisins, white chocolate chips and dark chocolate chips to the TM5 bowl
  10. Knead - approx 1 min, dough
  11. Transfer dough to work surface
  12. Wrap with plastic wrap
  13. Let rise until doubled
  14. Divide with dough scraper
  15. Transfer dough to baking sheet
  16. Let rise until doubled
  17. Add bread flour, water and extra virgin olive oil to the TM5 bowl
  18. Mix - approx 30 sec, speed 4
  19. Scrape down sides of TM5 bowl
  20. Mix - approx 30 sec, speed 4
  21. Scrape down sides of TM5 bowl
  22. Transfer mixture to piping bag
  23. Pipe crosses onto the buns
  24. Bake until browned - 25 min, 180°C
  25. Add golden caster sugar, mixed spice and water to a clean saucepan
  26. Heat until sugar has dissolved while stirring frequently - medium heat
  27. When you remove the buns from the oven, brush generously with the glaze
  28. Serve hot with lots of butter
