Thermomix Thai Tea Ice Cream

This Thai Tea Ice Cream is filled with fragrant spices that give it a depth of flavor – bold enough to serve as a dessert in its own right. As a unique and refreshing accompaniment to a dessert, this is a great choice too. Even pour a shot of espresso over a scoop for a spruced-up Affogato. Star anise is the distinctive and warming spice at the front of this flavor profile, reminiscent of Indian Chai and iced Thai teas. An unforgettable flavor for ice cream!

  1. Add star anise pod, vanilla bean, golden caster sugar, loose thai tea and water to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Boil - approx 10 min, 100°C, speed 1
  4. Infuse - 15 min
  5. Strain
  6. Add single cream and condensed milk to the TM5 bowl
  7. Blend - approx 10 sec, speed 8
  8. Transfer content of TM5 bowl to large glass bowl and cover
  9. Chill in fridge
  10. Clean TM5 bowl with water
  11. Add single cream and condensed milk to the TM5 bowl
  12. Mix until stiff peaks form - approx 30 sec, speed 4
  13. Transfer content of large glass bowl to TM5 bowl
  14. Combine
  15. Transfer content of TM5 bowl to plastic container
  16. Freeze - 6 hr
