The secret to any good leafy salad is using herbs just as you would salad leaves. They add monumental flavor and diversity to each mouthful. For this Thai Chicken Salad we let our herbs do the talking and the result is a fragrant, spicy and tart salad that comes together with almost no supervision. Serve with a chicken breast and the dressing atop a toasted flatbread and you have a simple Summer dinner for dining al fresco, or a healthy lunch (hot or cold)!

METHOD


  1. Add grape tomato, Thai basil, cilantro, fresh basil, mint, green onion and mixed salad leaves to a clean large mixing bowl
  2. Add garlic clove, fresh chili, green chili, coconut sugar, sea salt and cilantro to the TM5 bowl
  3. Fit TM5 bowl to TM5
  4. Chop - approx 5 sec, speed 8
  5. Then add mayonnaise and lime juice to the dressing
  6. Blend - approx 5 sec, speed 5
  7. Toss dressing with salad
  8. Top with chicken breast and fresh chili
  9. Serve with lime
