Probably the country's most famous culinary export in the baking department, Swiss Butter Bread Braids are a nationally and internationally adored. With milk and butter, the texture is soft and sweeter than normal loaves, and an egg wash gives it an inviting sheen, like a lacquer when finished baking. It's a great beginner's recipe, as it's a touch more straightforward and significantly less involved than some of our other advanced bread recipes. Get baking!

INGREDIENTS


  • Butter icon

    1.76oz/50g (about 3½ tbsp)
  • Milk icon
    Milk
    10.14fl oz/300g (1¼ cups)
  • Bread flour icon
    Bread flour
    17.64oz/500g (about 4⅛ cups)
  • Fresh yeast icon
    Fresh yeast
    1.06oz/30g (about 2½ tbsp)
  • Sugar icon
    Sugar
    2 tsp (0.30oz/8g)
  • Salt icon

    1 tsp (0.21oz/6g)
  • Egg icon

METHOD


  1. Add butter and milk to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Heat - approx 2 min, 50°C, speed 2
  4. Then add bread flour, fresh yeast, sugar and salt to the TM5 bowl
  5. Blend - approx 10 sec, speed 6
  6. Knead - approx 3 min, dough
  7. Transfer content of TM5 bowl to work surface
  8. Wrap loosely with plastic wrap
  9. Let rest onto work surface until doubled
  10. Pre-heat oven - 220°C
  11. Divide into halves with dough scraper
  12. Roll
  13. Twist
  14. Prove until doubled
  15. Add egg and milk to a clean small bowl
  16. Beat until combined
  17. Brush
  18. Prove dough slightly
  19. Bake until light golden - 12 min, 220°C
  20. Let cool completely
