Dessert soup is the sweet sister of gazpacho, and the kooky cousin of smoothies. Wherever you place it on the culinary family tree, this eccentric recipe for Strawberry and Rhubarb Dessert Soup will make you care less about labels. Serve in Summer when rhubarb is in season to get the best flavor from your ingredients, with a sweet and tart interplay between it and the strawberries. METHOD


  1. Add orange and dark brown sugar to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blitz - approx 5 sec, speed 9
  4. Then add orange juice to the TM5 bowl
  5. Cook - approx 6 min, varoma, speed 1
  6. Then add rhubarb, strawberries, orange juice, ground cinnamon and vanilla bean paste to the TM5 bowl
  7. Cook - approx 13 min, 100°C, speed 2
  8. Blend - approx 1 min, speed 8
  9. Serve
