This lively steamed salmon recipe boasts flavor and nutrition - a feel-good winner for weeknights. Another bonus is that it can be whipped up in a hurry – the most time consuming effort is probably the salsa, which can be made in advance and kept in the fridge. The mango and pineapple salsa is truly the star of this dish – the not-so-secret sauce – adding sweetness and acidity, playing off the heat of fresh chilli to brighten the whole dish. Serve with rice and garnish with coriander, et voilá!

METHOD


  1. Add salmon filet to the varoma tray
  2. Sprinkle with sea salt then set aside
  3. Add pineapple and mango to a clean large mixing bowl
  4. Add fresh chili and coconut sugar to the TM5 bowl
  5. Fit TM5 bowl to TM5
  6. Chop - approx 5 sec, speed 6
  7. Scrape down sides of TM5 bowl
  8. Add red bell pepper, green bell pepper, red onion, cilantro, lime and sea salt to the TM5 bowl
  9. Chop - approx 4 sec, speed 5
  10. Transfer content of TM5 bowl to salsa
  11. Toss gently with slotted spoon
  12. Rinse TM5 bowl with water
  13. Add jasmine rice to the TM5 bowl
  14. Pour water into the TM5 bowl
  15. Steam - approx 10 min, 100°C, speed 3
  16. Retrieve fish
  17. Steam - approx 5 min, varoma, speed 4
  18. Transfer content of TM5 bowl to serving plate
  19. Arrange fish in serving plate
  20. Serve salsa with serving plate
  21. Garnish with cilantro and fresh chili
