Thermomix Soft Buttermilk Rolls

These Soft Buttermilk Rolls are the perfect bread for little hands and mouths, as they are marshmallow-soft and great for on the go. Making them requires a little time commitment, as any of our bread recipes do, to account for the time the yeast will take to rise the bread – in baker's lingo this process is called "proving". The buttermilk breaks down the gluten (kneading it stretches it and makes it chewy) to leave you with pillowy little clouds of bread.



  • Bread flour icon

    13.40oz/380g (about 3⅛ cups)
  • Sugar icon
    1.06oz/30g (about 2½ tbsp)
  • Buttermilk icon
    11.16fl oz/330g (1½ cups)
  • Sea salt icon
    Sea salt
    1 pinch
  • Butter icon
    0.88oz/25g (about 1¾ tbsp)
  • Dried yeast icon
    Dried yeast
    2 tsp (0.28oz/8g)


  1. Add bread flour, sugar and buttermilk to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Cook and let cool - approx 3 min, 80°C, speed 3
  4. Then add bread flour, sea salt, butter and buttermilk to the dough
  5. Mix - approx 10 sec, speed 6
  6. Then add dried yeast to the dough
  7. Mix - approx 4 min, dough
  8. Transfer dough to large mixing bowl
  9. Cover with kitchen towel
  10. Let rise until doubled
  11. Shape into balls
  12. Line a clean baking sheet with parchment paper
  13. Transfer dough balls to baking sheet
  14. Cover with kitchen towel until doubled
  15. Pre-heat oven - 180°C
  16. Bake - 15 min, 180°C
  17. Serve immediately
