Depending on how you look at it, the best or worst quality of staggeringly tasty ribs is the time they take to marinate. Our Smoky BBQ Pork Ribs are no different, and need at least 8 hours for the Thermomix rub to settle in and let the flavors come of age. Despite this, a dish like this triumphs for both flavor and novelty – there's nothing better than eating with your hands and having sauce all over your face. The best quality meat will make the best quality result, so don't skimp at the butcher's.

INGREDIENTS

  • Chili flakes icon

  • Ground cumin icon

  • Coconut sugar icon

  • Sea salt icon

  • Cayenne pepper icon

  • Pork spare ribs icon

    8¼ cups

METHOD


  1. Make sure your ribs will fit into the varoma dish and tray
  2. Place paprika, chilli flakes, cumin, coconut sugar, salt, cayenne, garlic powder and black pepper into the thermomix bowl
  3. Blend - approx 10 sec, speed 5
  4. Rub this mixture all over the ribs, coating them as well as possible
  5. Let rest in fridge - 8 hr
  6. Pre-heat oven - 220°C
  7. Place the ribs into the varoma dish and tray
  8. Put the water into the thermomix bowl and set varoma into position
  9. Fit TM5 bowl to TM5
  10. Steam - approx 1 hr, 100°C, speed 4
  11. Transfer the ribs into an ovenproof dish and coat with the smoky bbq sauce
  12. Cook until charred - 40 min, 220°C
  13. Serve with a fresh herb salad or smoky bbq sauce
