Rhubarb has a very short season, so making the most of it is important! Our Rhubarb Strawberry Pie pairs the tangy, tart "vegetable" with the sweet and palatable strawberry for a classic combination. It takes a little while for the whole recipe to come together, between the jammy filling and the Vanilla Bean Pastry; but the payoff is unmatchable. INGREDIENTS


  • Rhubarb icon
    Rhubarb
    22.93oz/650g (about 6½ cups)
    chopped
  • Butter icon

    7.05oz/200g (about ¾ cup)
    cold, cubed
  • Strawberries icon

    1½ cups (about 8.82oz/250g)
    hulled, halved
  • Sugar icon

    3.53oz/100g (about ½ cup)
  • Vanilla bean icon

  • Water icon

    1 tbsp (about 0.50fl oz/15g)
    cold
  • Golden caster sugar icon

    1.76oz/50g (about 4 tbsp)
  • All purpose flour icon

METHOD


  1. Add rhubarb, sugar, vanilla bean and water to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Cook - approx 12 min, 100°C, reverse gentle stir
  4. Remove
  5. Transfer content of TM5 bowl to medium bowl
  6. Let cool completely
  7. Add golden caster sugar and vanilla bean to the TM5 bowl
  8. Mix - approx 10 sec, speed 10
  9. Then add butter and all purpose flour to the TM5 bowl
  10. Mix until crumbs form - approx 10 sec, speed 6
  11. Then add water to the TM5 bowl bit by bit
  12. Mix - dough
  13. Transfer content of TM5 bowl to lightly floured surface
  14. Divide
  15. Roll out
  16. Transfer half of dough to pie dish
  17. Freeze - 20 min
  18. Pre-heat oven - 190°C
  19. Transfer filling to pie dish
  20. Arrange strawberries in the pie dish
  21. Roll out dough
  22. Place dough on pie dish
  23. Press
  24. Cut
  25. Bake until golden brown - 30 min, 190°C
  26. Transfer onto cooling rack
  27. Serve
