Polish Veggie Salad is comprised of crunchy vegetables, sweet apple and pickled gherkins, and a creamy mayo-based dressing. It's great for serving beside mains to get a few of your 5 a day in, or in a lunchbox to go as it keeps quite well. Boiled eggs add protein and texture and the dijon mustard gives it a little unexpected kick. Great for Summer picnics as it takes less than a half an hour to throw this all together in the Thermomix.

INGREDIENTS

    peeled, diced

  • Parsnip icon

    peeled, diced
  • Apple icon

METHOD


  1. Add egg to the simmering basket
  2. Add water to the TM5 bowl
  3. Arrange simmering basket
  4. Add potato to the varoma tray
  5. Add carrot and parsnip to the varoma dish
  6. Steam - approx 15 min, varoma, speed 4
  7. Add apple and gherkins to a clean large mixing bowl
  8. Add onion and frozen peas to the large mixing bowl
  9. Transfer eggs to water bath
  10. Stir vegies and check to see if they are cooked, just tender
  11. The potatoes will tend to be cooked faster than the rest believe it or not
  12. Once veggies are cooked, remove Varoma and set aside with the lid off and allow to cool
  13. Add dijon mustard, lemon, sea salt and mayonnaise to a clean small bowl
  14. Mix with tablespoon until combined
  15. Peel eggs
  16. Cut into quarters
  17. Transfer vegetables to large mixing bowl
  18. Transfer potatoes to large mixing bowl
  19. Pour dressing into large mixing bowl
  20. Arrange eggs in large mixing bowl
  21. Serve
