Sunday roast has never looked so good! Our top tip for cooking lamb is a dual cooking method; steaming first to render out some fat and retain moisture, then roast in the oven for the perfect textural finish on the outside. Ten minutes before finishing, top with your Thermomix-made pesto until a crust forms and emits an aromatic smell, and don't skip resting the meat for 20 minutes (covered) before serving. This is important to let the proteins relax, and give it a much better texture – don't worry, it will stay hot. Serve with roasted veg to a suitably impressed audience.

METHOD


  1. Pre-heat oven - 220°C
  2. Drizzle a clean baking sheet with extra virgin olive oil
  3. Add water to the TM5 bowl
  4. Line the varoma dish with parchment paper
  5. Add lamb leg to the varoma dish
  6. Season
  7. Arrange
  8. Steam TM5 bowl - approx 25 min, varoma, speed 4
  9. Drain
  10. Transfer lamb to baking sheet
  11. Bake - 30 min, 220°C
  12. Add mixed peppercorns, lemon, garlic clove, mint and fresh rosemary to the TM5 bowl
  13. Fit TM5 bowl to TM5
  14. Blitz - approx 8 sec, speed 8
  15. Then add arugula, pistachios and sea salt to the TM5 bowl
  16. Blend - approx 5 sec, speed 8
  17. Scrape down sides of TM5 bowl
  18. Pour extra virgin olive oil into the TM5 bowl while machine is running
  19. Mix - speed 3
  20. Transfer Pesto to lamb
  21. Cook until fragrant - 10 min, 220°C
  22. Let rest onto work surface - 20 min
  23. Add cherry tomatoes, extra virgin olive oil, balsamic vinegar, sea salt and black pepper to a clean baking sheet
  24. Cook - 7 min, 220°C
  25. Serve with arugula, rosemary and mint
