A fabulous quality of pasta is that it can be simultaneously simple and delicious, and take up very little of your time to prepare (and eat). Considering times that you need something substantial in a flash, our Orecchiette Pasta with Italian Sausage and Sage recipe will do the job and do it well. Depending on the sausage, this dish can be spicy too, so if you have a spicy sausage, don't forget some mellow goat's cheese on top.

INGREDIENTS


  • Bulb of garlic icon

    1 (1.69oz/48g)
    peeled
  • Water icon

    as needed
  • Salt icon

  • Pasta shells icon
    Pasta shells
    12.35oz/350g (about 1½ cups)
  • Sausage icon
    Sausage
    x 1 (about 3.88oz/110g)
  • Butter icon
    Butter

  • Fresh sage icon

    about ¼ cup (0.30oz/8g)
  • Sea salt icon
    Sea salt
    as needed
  • Soft goat cheese icon
    Soft goat cheese
    3.53oz/100g (about ½ cup)

METHOD


  1. Add water and salt to a clean large saucepan
  2. Boil
  3. Add pasta shells to the pasta
  4. Cook until al dente
  5. Add sausage and bulb of garlic to the TM5 bowl
  6. Fit TM5 bowl to TM5
  7. Chop - approx 8 sec, reverse speed 8
  8. Cook - approx 15 min, varoma, speed 2
  9. Add butter to a clean frying pan
  10. Heat in frying pan - medium heat
  11. Melt until lightly browned while stirring occasionally
  12. Add fresh sage to the frying pan
  13. Fry in frying pan until crispy
  14. Drain with paper towels
  15. Sprinkle with sea salt
  16. Drain pasta
  17. Transfer pasta to 4 large serving bowls
  18. Transfer sausage mixture to 4 large serving bowls
  19. Transfer herbs to 4 large serving bowls
  20. Crumble soft goat cheese over the large serving bowls
  21. Serve
