Panforte is a dense and decadent fruit cake, one that puts all other fruit cakes to shame. It is filled with dark chocolate, crunchy nuts and sweet fruits, all for a textural and delightful cake. It's a great shake up for Christmas time as it's much less common than traditional puddings and much more suitable for an "event" dessert. We have the Italians to thank for this indulgent cake, so you can trust that is is unfalteringly delicious – buon appetito!

METHOD


  1. Pre-heat oven - 160°C
  2. Grease a clean cake tin
  3. Add nutmeg, cinnamon stick, cardamom pods, ground ginger and vanilla bean to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Blitz - approx 10 sec, speed 8
  6. Then add dark chocolate, roasted cocoa beans, unsalted butter and golden caster sugar to the TM5 bowl
  7. Chop - approx 2 sec, speed 1
  8. Scrape down sides of TM5 bowl
  9. Add honey to the TM5 bowl
  10. Cook - approx 4 min, 60°C, speed 1
  11. Then add almond extract, orange extract, cornflour, cocoa powder, milk chocolate and dark chocolate to the TM5 bowl
  12. Mix until combined - approx 10 sec, speed 4
  13. Scrape down sides of TM5 bowl
  14. Add mixed nuts, glace cherries, dried apricots, dried cranberries and dried figs to the TM5 bowl
  15. Mix - approx 20 sec, dough
  16. Transfer content of TM5 bowl to cake tin
  17. Bake until fragrant - 30 min, 160°C
  18. Let cool
  19. Dust with icing sugar
