If you, like many others, have a particular weakness for brownies, please take this as a warning: our Mocha Walnut Butter Brownies are utterly addictive and should be treated with caution. They combine chocolate, nuts and coffee in an almighty package, but somehow have no dairy, no gluten nor refined sugar. It's almost a contradiction that a dessert can be so indulgent without being so harmful. The seamless alternative to unhealthier options, this will soon become your only brownie recipe.

INGREDIENTS

  • Vanilla bean paste icon

    1 tbsp (0.57oz/16g)
  • Sea salt icon

  • Baking powder icon

    1 tsp (0.17oz/5g)
  • Maple syrup icon

    1.79fl oz/75g (3½ tbsp)
  • Cocoa powder icon

    ½ cup (about 1.59oz/45g)
  • Mocha walnut butter icon
    Mocha walnut butter
    7.05oz/200g (about ¾ cup)
  • Walnuts icon

    3.17oz/90g (about ¾ cup)
    toasted, shelled

METHOD


  1. Pre-heat oven - 160°C
  2. Line the base of a loaf tin (23 x 14cm) with paper that comes up over the sides for easy removal
  3. Add egg, vanilla, salt, baking soda, maple syrup and cocoa powder to thermomix bowl
  4. Fit TM5 bowl to TM5
  5. Blend - approx 20 sec, speed 5
  6. Add walnuts
  7. Mix - approx 7 sec, dough
  8. Spread into the loaf tin
  9. Bake until soft - 20 min, 160°C
  10. Cool and serve...or eat warm
