Thermomix Merry Christmas Pavlova with Fresh Berries

The prep time on this recipe is just 15 minutes – the rest is impatiently waiting for your meringue to cool so you can fill it to the brim with whipped cream and fresh fruit. The Thermomix will create your meringue batter effortlessly, as will it whip your cream. Combine the respective ingredients for a seminal classic, one which we think is a regal Christmas dessert, but will do for any special occasion. Top tip: use our Salted Caramel Cream recipe for bonus points, and always choose seasonal fruits for best results.

  • Golden caster sugar icon

    11.64oz/330g (about 1½ cups)
  • Cornflour icon
    1 tbsp (0.28oz/8g)
  • White wine vinegar icon

    2 tsp (0.33fl oz/10g)
  • Vanilla bean paste icon

    1 tsp (0.19oz/5g)
  • Whipped cream icon

  • Mixed berries icon

  1. Pre-heat oven - 150°C
  2. Line a clean baking sheet with parchment paper then set aside
  3. Add egg white and cream of tartar to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Whisk - approx 5 min, 37°C, speed 3
  6. Add golden caster sugar to the TM5 bowl bit by bit while blending
  7. Whisk - approx 6 min, 37°C, speed 3
  8. Scrape occasionally
  9. Add cornflour, white wine vinegar and vanilla bean paste to the TM5 bowl
  10. Whisk - approx 1 min, 37°C, speed 3
  11. Transfer content of TM5 bowl to baking sheet gently
  12. Shape into a circle
  13. Reduce - 120°C
  14. Bake - 1 hr 20 min
  15. Let cool - 3 hr
  16. Spread with whipped cream generously
  17. Arrange mixed berries in the baking sheet
  18. Serve
