Manicotti is the American sister of cannelloni; thin tubes of pasta stuffed with cheese and other tasty fillings. The word Manicotti means "sleeves" – alluding its shape. The only difference between the two are the ridges on the tubes which leave extra surface area for the sweet and tangy marinara sauce to cling to. The recipe we use here is Crespelle, of the same family, but instead uses thin crepes as a conduit for the hidden delights. Use your Thermomix to whizz together any combination of cheese, veggies, herbs and aromatics for a wholly satisfying Italian meal.

METHOD


  1. Add mozzarella cheese, parmesan cheese and cheddar cheese to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blitz - approx 10 sec, speed 10
  4. Transfer half of content of TM5 bowl to medium bowl then set aside
  5. Add red onion, garlic purée, fresh basil and baby spinach to the TM5 bowl
  6. Chop - approx 5 sec, speed 8
  7. Scrape down sides of TM5 bowl
  8. Transfer content of TM5 bowl to large mixing bowl
  9. Add sea salt, black pepper, egg yolk and ricotta cheese to the filling
  10. Mix until well combined
  11. Pre-heat oven - 180°C
  12. Add marinara sauce to a clean baking dish
  13. Add cannelloni to a clean work surface
  14. Transfer filling to pasta
  15. Transfer pasta to baking dish
  16. Drizzle with marinara sauce
  17. Top with parmesan cheese
  18. Garnish with fresh basil
  19. Bake - 35 min, 180°C
  20. Serve
