This Lime Raspberry Flan has all the hallmarks of a quintessential Summer dessert - light and citrusy with fresh fruit. Flan is made with a custard base – similar to creme Anglaise, then infused with flavor. This recipe uses a Thermomix to create the vanilla and lime custard, poured over frozen raspberries and baked, garnished with fresh raspberries. The result is a sweet and tart tang, with crumbly pastry that need not be served with anything else!

METHOD


  1. Add all purpose flour, golden caster sugar and butter to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Mix - approx 5 sec, speed 5
  4. Then add egg yolk, crème fraîche and vanilla bean paste to the TM5 bowl
  5. Mix - approx 10 sec, speed 5
  6. Turn out on lightly-floured surface
  7. Press a clean lightly floured surface
  8. Transfer content of lightly floured surface to round pan
  9. Press
  10. Trim
  11. Freeze - 20 min
  12. Pre-heat oven - 180°C
  13. Add with pie weights
  14. Bake - 20 min, 180°C
  15. Remove
  16. Remove pie weights
  17. Reduce - 160°C
  18. Add golden caster sugar and lime to the TM5 bowl
  19. Blitz - approx 10 sec, speed 10
  20. Then add egg, crème fraîche and cornflour to the TM5 bowl
  21. Place frozen raspberries on the round pan
  22. Mix TM5 bowl - approx 10 sec, speed 5
  23. Get pastry
  24. Pour content of TM5 bowl into pastry
  25. Bake until just set - 40 min, 160°C
  26. Garnish with raspberries and lime
  27. Serve
