There is a lot to be said for those who tackle pesto in the traditional mortar and pestle method; but for those who have time constraints and limited upper-body strength, this Thermomix pesto recipe is for you. Giving you the same delightful flavors in ten minutes, this recipe triumphs over store-bought alternatives and grinding pine nuts for hours. Toast the nuts before adding them to the Thermomix for extra-rich flavor, and stream the oil slowly for a creamier texture. Ten minutes later – Hey Pesto!

INGREDIENTS


  • Parmesan cheese icon

    3.53oz/100g (about ¾ cup)

  • Fresh basil icon

    about ¾ cup (1.14oz/32g)

  • Lemon icon

    1 (2.05oz/58g)

  • Pine nuts icon

    3.53oz/100g (about ¾ cup)

  • Extra virgin olive oil icon

    2.23fl oz/60g (4½ tbsp)

METHOD


  1. Add pine nuts to a clean frying pan
  2. Toast gently in frying pan until light golden then set aside
  3. Add parmesan cheese to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Blitz - approx 10 sec, speed 10
  6. Then add garlic clove and fresh basil to the TM5 bowl
  7. Blend - approx 5 sec, speed 7
  8. Transfer nuts to TM5 bowl
  9. Mix - approx 30 sec, speed 4
  10. Drizzle with extra virgin olive oil while machine is running
  11. Add sea salt to the TM5 bowl to taste
  12. Add lemon to the TM5 bowl
  13. Transfer content of TM5 bowl to jar
  14. Serve
