Laksa is a dish native to Southeast Asia, one that's main characteristics are noodles, spicy coconut broth and white meat. For this Thermomix recipe, we chose to make a Fragrant Prawn and Coconut Laksa. Some of the ingredients will take a little bit of advanced notice, as you may not have curry leaves or galangal to hand, but it's worth it for the result. Think of an addictively bright and spicy bowl of noodles, with richness and depth that makes your nose water as you slurp up its broth and try to avoid dribbles on your shirt.

METHOD


  1. Add garlic clove, fresh chili, galangal, ginger purée, fresh turmeric, shrimp paste, tamarind paste, onion and extra virgin olive oil to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blend - approx 5 sec, speed 5
  4. Scrape down sides of TM5 bowl
  5. Blend - approx 5 sec, speed 5
  6. Sauté - approx 8 min, varoma, speed 2
  7. Then add water, chicken stock, coconut cream, curry leaves and coconut sugar to the TM5 bowl
  8. Cook - approx 10 min, 100°C, speed 1
  9. Then add prawns to the TM5 bowl
  10. Cook - approx 5 min, 100°C, speed 1
  11. Then season with sea salt to taste
  12. Serve
