Making tortillas from scratch is shockingly trouble-free in practice. You don't even need a tortilla press, just a rolling pin, your Thermomix and about an hour. These Flour and Duck Fat Tortillas will elevate any vaguely Mexican meal into a much more authentic one, as they're much more flavorful than store-bought and the freshness is overwhelming. Duck fat is the only ingredient you're likely to not have in your pantry, but it enhances the dough's elasticity and taste. You can even freeze the dough before cooking if you're not catering for a large (or hungry) group.

INGREDIENTS


  • Water icon
    Water
    5.07fl oz/150g (½ cup)
    warm
  • Bread flour icon
    Bread flour
    12.35oz/350g (about 2¾ cups)
  • Duck fat icon
    Duck fat
    2.12oz/60g (about 4¾ tbsp)
  • Sea salt icon
    Sea salt
    1 tsp (0.23oz/6g)

METHOD


  1. Add bread flour, duck fat and sea salt to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blend - approx 6 sec, speed 6
  4. Then add water to the TM5 bowl
  5. Knead - approx 1 min, dough
  6. Transfer content of TM5 bowl to work surface
  7. Knead until smooth
  8. Wrap with kitchen towel and let rise - approx 30 min
  9. Pre-heat a clean frying pan - medium heat
  10. Divide dough evenly into balls
  11. Roll into rounds
  12. Transfer dough to frying pan
  13. Fry one by one in frying pan until light golden
  14. Keep warm with kitchen towel
