Thermomix Confit Garlic and Garlic Oil

Discover the innumerable applications of garlic oil and you will never look back! This oil is imbued with garlic flavors, but has fewer fructans (which is the scientific term for the component that makes it hard to digest and often inedible for people with sensitivity) and so provides a fantastic way to get fragrant garlic flavors without many consequences. This recipe really shines when you want subtle notes as opposed to all-out flavor bombs.



  • Bulb of garlic icon

    1 (1.69oz/48g)
    broken up, unpeeled
  • Lemon icon
    1 (2.05oz/58g)
    juice of
  • Water icon
    1 liter (33.81fl oz/1000g)
  • Extra virgin olive oil icon
    Extra virgin olive oil
    13.01fl oz/350g (1½ cups)
  • Sea salt icon
    Sea salt
    as needed


  1. Fill a clean large glass bowl with ice water then set aside
  2. Add bulb of garlic to the simmering basket then set aside
  3. Add water to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Boil - approx 8 min, 100°C, speed 3
  6. Cook garlic - approx 30 sec, 100°C, speed 3
  7. Transfer garlic to large glass bowl
  8. Peel
  9. Drain TM5 bowl
  10. Transfer garlic to TM5 bowl
  11. Add extra virgin olive oil, lemon and sea salt to the TM5 bowl
  12. Cook - approx 1 hr, 80°C, reverse gentle stir
  13. Transfer content of TM5 bowl to jar and let cool
  14. Store in fridge
