Thermomix Coconut Peppermint Egg Nog

What could be more festive than egg nog? Only our Coconut Peppermint Egg Nog that adds a new dimension of freshness and taste to a much beloved Christmas drink. It veers a little off the traditional in that it is a dairy free recipe, but pays homage to the classic sweet and thick beverage. This recipe is totally family friendly, and for a touch of Christmas panache, top with a candy cane stirrer.

  • Coconut milk icon

    27.05fl oz/800g (3¼ cups)
  • Egg icon
    3 (5.29oz/150g)
  • Vanilla bean paste icon
    Vanilla bean paste
    2 tsp (0.38oz/11g)
  • Coconut cream icon
    Coconut cream
    18.34oz/520g (18.34oz/520g)
  • Peppermint extract icon
    Peppermint extract
    3 dashes


  1. Add golden caster sugar, coconut milk, egg and vanilla bean paste to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Cook - approx 8 min, 80°C, speed 4
  4. Cook - approx 2 min, 90°C, speed 4
  5. Transfer content of TM5 bowl to plastic container
  6. Cover with parchment paper
  7. Let cool completely onto work surface
  8. Refrigerate in fridge - 10 min
  9. Transfer custard to TM5 bowl
  10. Add coconut cream and peppermint extract to the TM5 bowl
  11. Mix - approx 8 sec, speed 4
  12. Chill in fridge
  13. Serve
