Sticky toffee pudding is a classic dessert that hails from England, and has found its way into many cuisines; and as such, is an iconic dessert, beloved by many. Our Classic Sticky Date Puddings with Caramel Sauce is a familiar homage – a moist and sweet cake-like pot of warmth for winter months. Pair it with any of our Thermomix ice cream recipes and you won't make another dessert again! The benefit of steaming in the Thermomix preserves the moisture and luxurious texture. Go the whole hog and make your own caramel sauce (but store bought will suffice, too).

METHOD


  1. Grease 8 clean Dariole molds
  2. Add dates to the TM5 bowl
  3. Fit TM5 bowl to TM5
  4. Chop - approx 6 min, speed 6
  5. Then add water to the TM5 bowl
  6. Heat - approx 5 min, 100°C, speed 1
  7. Blend - approx 10 sec, speed 4
  8. Then add baking soda to the TM5 bowl
  9. Mix then set aside - approx 4 sec, speed 2
  10. Transfer date mixture to small bowl
  11. Let cool until room temperature
  12. Add coconut sugar and butter to the TM5 bowl
  13. Blend - approx 3 min, speed 6
  14. Whisk until light and fluffy - approx 1 min, speed 4
  15. Then add egg and all purpose flour to the TM5 bowl
  16. Mix - approx 20 sec, speed 4
  17. Then add vanilla bean paste, salted caramel sauce, sea salt and all purpose flour to the TM5 bowl
  18. Transfer date mixture to TM5 bowl
  19. Blend - approx 5 sec, speed 4
  20. Divide content of TM5 bowl between 8 Dariole molds evenly
  21. Rinse TM5 bowl
  22. Add water to the TM5 bowl
  23. Arrange the varoma dish
  24. Steam Dariole molds - approx 25 min, varoma, speed 4
  25. Turn out
  26. Serve
