These bite-sized Christmas Baked Stuffed Donuts are great for festive platters. The recipe makes twelve and results in soft, chewy donuts with a mince pie stye filling. The spices create the familiar Yuletide aromas and a splash of rum blends the flavors seamlessly. There is a little bit of assembly required, so make ahead of time and give yourself a generous hour to do so. METHOD


  1. Pre-heat oven - 180°C
  2. Add sea salt, golden caster sugar, butter, dried yeast, buttermilk and egg to the TM5 bowl
  3. Fit TM5 bowl to TM5
  4. Heat - approx 1 min, 37°C, speed 3
  5. Then add bread flour to the TM5 bowl
  6. Knead - approx 2 min, dough
  7. Transfer content of TM5 bowl to lightly floured surface
  8. Form together
  9. Wrap tightly with plastic wrap
  10. Let rise until doubled
  11. Add pistachios, vanilla bean and sugar to the TM5 bowl
  12. Blitz - approx 10 sec, speed 8
  13. Then add almond extract, orange extract, lemon extract, dried cranberries, currants and rum to the TM5 bowl
  14. Blend - approx 10 sec, speed 6
  15. Transfer content of TM5 bowl to cutting board
  16. Form
  17. Cut into pieces
  18. Line a clean baking sheet with parchment paper
  19. Roll dough
  20. Cut
  21. Roll into dough balls
  22. Flatten
  23. Transfer filling to dough
  24. Fold
  25. Place dough on baking sheet evenly and cover
  26. Let rise until doubled
  27. Bake until light golden - 10 min, 180°C
  28. Brush with simple syrup
  29. Roll in caster sugar
