Chicken noodle soup is long famed as a medicinal and comforting broth – and so we created a low-carb, vegetable based Thermomix friendly iteration – Chicken Zoodle Soup. Lightweight yet filling, thanks to all of the vegetables, this recipe is perfect for a rainy day, or when immunity is low and needs a boost. Freeze or refrigerate for future uses, and don't be afraid to add potatoes or thick, crusty bread for something a little more substantial.

INGREDIENTS

METHOD


  1. Add fresh parsley to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Chop - approx 3 sec, speed 7
  4. Transfer content of TM5 bowl to small bowl then set aside
  5. Add scallion, garlic clove, ginger and extra virgin olive oil to the TM5 bowl
  6. Chop - approx 3 sec, speed 7
  7. Scrape down sides of TM5 bowl
  8. Chop - approx 3 sec, speed 7
  9. Scrape down sides of TM5 bowl
  10. Add ground turmeric to the TM5 bowl
  11. Sauté - approx 5 min, varoma, speed 1
  12. Then add carrot, celery stalk, chicken stock and water to the TM5 bowl
  13. Cook - approx 15 min, 100°C, reverse speed 1
  14. Then add chicken thighs to the TM5 bowl
  15. Cook - approx 7 min, 100°C, reverse speed 1
  16. Add zoodles to the clean large serving bowls
  17. Transfer content of TM5 bowl to 6 large serving bowls
  18. Sprinkle herbs with 6 large serving bowls
  19. Serve immediately
