Chicken Liver Pate Mousse is a mainstay of Christmas cuisine, and making your own elevates its revered status even further. You may be surprised to see, that with the aid of your Thermomix, making it at home is far easier than suspected. This rich and creamy spread is the perfect starter for a luxurious festive meal. Surprisingly, it is a one-pot-wonder, that needs just a short time to cool before serving. Serve with oiled and toasted baguette for an authentically indulgent experience.

  1. Add garlic clove, shallot and unsalted butter to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Chop - approx 1 sec, speed 6
  4. Scrape down sides of TM5 bowl
  5. Sauté - approx 5 min, varoma, speed 1
  6. Add chicken liver to a clean work surface
  7. Pat dry with paper towels
  8. Season with sea salt and black pepper
  9. Transfer content of work surface to TM5 bowl
  10. Add brandy to the TM5 bowl
  11. Cook - approx 5 min, 100°C, speed 1
  12. Blend - approx 20 sec, speed 1
  13. Scrape down sides of TM5 bowl
  14. Add single cream and nutmeg to the TM5 bowl
  15. Blend - approx 20 sec, speed 7
  16. Transfer content of TM5 bowl to 12 ramekins
  17. Drizzle with butter
  18. Garnish with fresh herbs
  19. Keep out of fridge until they reach room temperature and then store covered in the fridge until service
