INGREDIENTS


  • Fresh yeast icon
    Fresh yeast
    1.06oz/30g (about 2½ tbsp)
  • Sugar icon
    Sugar
    1 tsp (0.15oz/4g)
  • Water icon
    Water
    10.14fl oz/300g (1¼ cups)
  • Salt icon
    Salt
    1 pinch
  • Bread flour icon
    Bread flour
    19.40oz/550g (about 4½ cups)
  • Malt powder icon
    Malt powder
    2 tbsp (1.46oz/41g)
  • Extra virgin olive oil icon
    Extra virgin olive oil
    0.74fl oz/20g (1½ tbsp)
  • Sourdough starter icon
    Sourdough starter
    7.05oz/200g (about 1 cup)
  • Water icon
    Water
    1 liter (33.81fl oz/1000g)

METHOD


  1. Add fresh yeast, sugar, water and salt to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Heat - approx 2 min, 37°C, speed 2
  4. Then add bread flour, malt powder, extra virgin olive oil and sourdough starter to the TM5 bowl
  5. Mix - approx 10 min, speed 6
  6. Knead - approx 2 min, dough
  7. Transfer content of TM5 bowl to work surface
  8. Wrap loosely with plastic wrap
  9. Let rest onto work surface until doubled - 2 hr
  10. Punch down
  11. Divide into halves with dough scraper
  12. Shape into rounds
  13. Line with parchment paper
  14. Pre-heat oven - 220°C
  15. Heat a clean pizza stone oven - 220°C
  16. Add water to the TM5 bowl
  17. Boil - approx 8 min, varoma, speed 2
  18. Transfer dough to varoma tray
  19. Steam - approx 10 min, varoma, speed 3
  20. Transfer dough to pizza stone
  21. Bake - 8 min, 220°C
  22. Let cool on round wire rack - 1 hr
  23. Serve
