This Cauliflower Cheese Soup is comfort food in the extreme, without compromising too much on health. It's a creamy, cheesy and hearty embrace in a bowl, that will get devoured. Leeks and fresh chives are the aromatic top-notes with parmesan giving a nutty, salty base and black pepper sprinkled on top to finish. INGREDIENTS


  • Parmesan cheese icon
    Parmesan cheese
    7.05oz/200g (about 1¼ cups)
    cubed
  • Cauliflower icon
    Cauliflower
    21.16oz/600g (about 1¼)
    florets of
  • Fresh chives icon
    Fresh chives
    as needed
    finely chopped
  • Butter icon
    Butter
    1.06oz/30g (about 2⅛ tbsp)
  • Leek icon
    Leek
    1 (3.17oz/90g)
  • Vegetable stock icon
    Vegetable stock
    16.91fl oz/500g (2⅛ cups)
  • Single cream icon
    Single cream
    6.76fl oz/200g (¾ cup)
  • Salt & pepper icon

METHOD


  1. Add parmesan cheese to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blend - approx 10 sec, speed 10
  4. Scrape down sides of TM5 bowl
  5. Transfer content of TM5 bowl to small bowl
  6. Add butter and leek to the TM5 bowl
  7. Chop - approx 5 sec, speed 5
  8. Scrape down sides of TM5 bowl
  9. Sauté - approx 5 min, varoma, speed 2
  10. Then add cauliflower and vegetable stock to the TM5 bowl
  11. Cook - approx 15 min, 100°C, speed 2
  12. Then add single cream to the TM5 bowl
  13. Transfer cheese mixture to TM5 bowl
  14. Purée - approx 1 min, speed 5
  15. Then season with salt & pepper
  16. Garnish with fresh chives
  17. Serve
