Caramel Pots are a top-tier Themomix recipe. They can be dressed up, depending on how you serve them (in a coupe, if you're fancy) and when. They are delightful little treats for lunches and picnics too, if you keep them in tupperware. Making the caramel is quite simple; ensure that you stir constantly whilst it comes up to a boil, then not at all when it's caramelising. Stirring will clump the crystal structures in the sugars, so as tempting as it may be, take a beat and let it work its magic.
