Caramel Pots are a top-tier Themomix recipe. They can be dressed up, depending on how you serve them (in a coupe, if you're fancy) and when. They are delightful little treats for lunches and picnics too, if you keep them in tupperware. Making the caramel is quite simple; ensure that you stir constantly whilst it comes up to a boil, then not at all when it's caramelising. Stirring will clump the crystal structures in the sugars, so as tempting as it may be, take a beat and let it work its magic.

INGREDIENTS


  • Golden caster sugar icon
    Golden caster sugar
    1 cup (7.20oz/204g)
  • Water icon
    Water
    2 tbsp (1.00fl oz/30g)
  • Vanilla extract icon
    Vanilla extract
    3 tsp (0.50fl oz/13g)
  • Milk icon
    Milk
    3.38fl oz/100g (½ cup)
  • Whipping cream icon
    Whipping cream
    3.53oz/100g (about ½ cup)
  • Egg yolk icon
    Egg yolk
    4 (2.82oz/80g)

METHOD


  1. Add golden caster sugar, water and vanilla extract to a clean saucepan
  2. Cook until sugar has dissolved - medium-low heat
  3. Heat until boiling
  4. Stir constantly
  5. Boil until caramelized
  6. Pour caramel into baking sheet
  7. Let cool until hard
  8. Break into pieces
  9. Get the TM5 bowl
  10. Transfer caramel to TM5 bowl
  11. Add vanilla extract, milk, whipping cream and egg yolk to the TM5 bowl
  12. Fit TM5 bowl to TM5
  13. Cook - approx 8 min, 80°C, speed 4
  14. Cook - approx 2 min, 90°C, speed 4
  15. Transfer content of TM5 bowl to 4 jars
  16. Chill in fridge until set
  17. Serve
