It is universally known that butter is incredible – French cuisine largely has it to thank for its fame – but what if you could improve upon perfection? We give you Cacao Nib Butter! This can be used for anything, from baking to toast, smeared on banana bread or anything your imagination conceives. It keeps well frozen, and can be called up to the plate at a moment's notice.

INGREDIENTS


  • Cacao nibs icon
    Cacao nibs
    1.76oz/50g (about 5¾ tbsp)
    roasted
  • Unsalted butter icon
    Unsalted butter
    5.29oz/150g (about ¾ cup)
    diced
  • Icing sugar icon
    Icing sugar
    0.71oz/20g (about 2¾ tbsp)
  • Vanilla bean paste icon
    Vanilla bean paste
    1 tsp (0.19oz/5g)
  • Sea salt icon
    Sea salt
    1 pinch

METHOD


  1. Add cacao nibs, icing sugar, vanilla bean paste, sea salt and unsalted butter to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blend - approx 10 sec, speed 6
  4. Roll
  5. Wrap with waxed paper
  6. Refrigerate in fridge
