Butter Cake is similar to sponge cake, but varies in its ingredients and ratios, which results in a more moist cake with greater density. This recipe is an easy one, that can be iced accordingly, and will provide a moisture-laden base for any toppings you see fit. It's a great one to have on hand, as the Thermomix will combine all ingredients that you just have to place into the oven and watch with bated breath.

  • Plain yogurt icon

    room temperature
  • Whole milk icon

    room temperature

    room temperature
  • Butter icon

    8.82oz/250g (about 1⅛ cups)
    room temperature
  • Vanilla bean paste icon

  • Golden caster sugar icon

METHOD


  1. Pre-heat oven - 170°C, middle rack
  2. Grease a clean cake tin
  3. Add butter to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Mix - approx 40 sec, 50°C, speed 4
  6. Then add plain yogurt, whole milk, vanilla bean paste and egg to the TM5 bowl
  7. Mix - approx 10 sec, speed 3
  8. Then add golden caster sugar, self raising flour and malt powder to the batter
  9. Mix - approx 10 sec, speed 3
  10. Scrape down sides of TM5 bowl
  11. Mix - approx 30 sec, speed 3
  12. Pour batter into cake tin
  13. Smooth until level
  14. Bake - 1 hr, 170°C, middle rack
  15. Cool - 15 min
  16. Cool completely on round wire rack
