Claim your title of "Host with the most" after serving up this Brioche French Toast with Swiss Meringue. Nothing looks more regal than a caramel brown slice of thick toast, topped with a luxurious soft meringue and fresh berries tumbling around its peak. For any special breakfast, this will be your first port of call. Despite it being a showstopper, it is relatively pain-free, as the Thermomix takes care of the egg batter as well as the Swiss meringue. Magic.

INGREDIENTS


  • Mixed berries icon

    1⅛ cups (about 7.05oz/200g)
    sliced
  • Brioche bread icon

  • Egg yolk icon

  • Vanilla bean paste icon

    1 tsp (0.19oz/5g)
  • Milk icon

    6.76fl oz/200g (¾ cup)
  • Butter icon

  • Egg white icon

  • Cream of tartar icon

  • Golden caster sugar icon

    7.05oz/200g (about 1 cup)
  • Strawberry jam icon

METHOD


  1. Pre-heat oven - 160°C
  2. Line a clean baking sheet with parchment paper
  3. Add brioche bread to the baking sheet
  4. Slice brioche loaf thickly, about 8cm thick
  5. Add egg yolk, vanilla bean paste and milk to the TM5 bowl
  6. Fit TM5 bowl to TM5
  7. Blend - approx 10 sec, speed 10
  8. Transfer content of TM5 bowl to plate
  9. Soak each slice of bread in the egg mixture turning once
  10. Add butter to a clean frying pan
  11. Heat - medium heat
  12. Cook the toast until golden on both sides
  13. Place onto prepared tray and keep in the oven until ready to serve. (No longer than 20 minutes.)
  14. Add egg white, cream of tartar and sea salt to the TM5 bowl
  15. Whisk - approx 4 min, 37°C, speed 3
  16. Then add golden caster sugar to the TM5 bowl slowly
  17. Whisk - approx 6 min, 50°C, speed 3
  18. Serve
  19. Garnish with strawberry jam, lemon curd and mixed berries
