These Breakfast Yorkshires with Eggs and Bacon are a playful rendition of some of the best elements of British and American cooking. The batter is surprisingly easy to whip up, so is suitable for an easy weekend breakfast. They take a little bit of finesse with the timing – so do follow the instructions a touch more rigidly than you would otherwise. Try first with our recommended prosciutto and chive mix, but don't hesitate to get creative on your future attempts to add your own personalised touch.

    8.45fl oz/250g (1 cup)

    1 tbsp (0.50fl oz/13g)
  • Cake flour icon

METHOD


  1. Pre-heat oven - 220°C
  2. Grease a clean jumbo muffin pan generously with extra virgin olive oil
  3. Add egg, milk, sea salt, extra virgin olive oil and cake flour to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Blend - approx 30 sec, speed 6
  6. Scrape down sides of TM5 bowl
  7. Blend then set aside - approx 30 sec, speed 6
  8. Let rest - 30 min
  9. Add water to the TM5 bowl
  10. Blend - approx 30 sec, speed 6
  11. Pre-heat jumbo muffin pan oven - 20 min, 220°C
  12. Divide mixture between jumbo muffin pan quickly
  13. Cook - 8 min, 220°C
  14. They need to be back in the oven very quickly, so taking the time to do more will cool down the tins and you won't get the best result
  15. Divide prosciutto between the jumbo muffin pan evenly
  16. Add egg to the jumbo muffin pan
  17. Bake - 8 min, 220°C
  18. Remove from tins before they stick
  19. Garnish with fresh chives
