Our Apricot Chicken Curry is any host's hero. Its sweet sauce appeals to everyone, and the slow cooker ensures that the flavors blend together perfectly, and that the chicken is falling off the bone. Prep time is just 15 minutes, whilst cook time is 3 hours – so get it done before guests arrive for a seamless transition from drinks to dinner. If you're partial to a spicier palette, throw in some fresh chillis for a kick of heat!

METHOD


  1. Add yellow onion, garlic clove, ginger and extra virgin olive oil to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Chop - approx 5 sec, speed 5
  4. Cook - approx 5 min, varoma, speed 1
  5. Then add tomato chutney to the sauce
  6. Cook - approx 1 min, varoma, speed 1
  7. Then add crushed tomatoes, canned apricots, dried apricots, sea salt and chicken stock to the sauce
  8. Cook - approx 5 min, 100°C, reverse speed 1
  9. Add chicken thighs to a clean slow cooker bowl
  10. Pour sauce into slow cooker bowl
  11. Cook in slow cooker until cooked through - 3 hr
  12. Garnish with cilantro
  13. Serve
